is there anywhere that does a bra that covers the whole bonnet?

picked up a 1990 16v corrado today that has been laid up for a year and on the way home every now and then it shuddered, the revs get dropping and rising every five minutes, any suggestions to what this could be? my thoughts are shitty old fuel, blocked pipes and filters or crappy plugs? any suggestions as to what it could be?
