Overheating & occasssional ‘hot stall’ 16v 2.0 9a

I have followed forum thread advice and sought to remove any airlocks from coolant system

I have on order a new coolant tank lid

 

I noticed whilst massaging the coolant lines with coolant tank open that the fan only kicks in at about 110oC coolant temp > is this pointing toward the radiator temp thermosts being at fault? Most mentions I have found are for two stage temp/ fan switch. The temp sensor at bottom of rad has a three pin straight line connector

 

The top hose from cold get warm quickly, the bottom hose takes probably 5 minutes. Is there an oil of coolant temperature the bottom coolant hose from radiator should start?

Other thoughts welcome

 

I also get occassional ‘hot stall, which kicks in when decelerating with clutch in - but no pattern or frequency to it - again pointers welcome
