help... over heating problems

I have had my G60 now for 17 years. it was parked for the past 10 years. since bringing her out again i have managed to change almost everything - every pump and pipes and most of the sensors.

i have changed the water pump, new thermo, expansion Tank and cap and also changed the matrix along with all the pipes. Changed the blue sensor too.. car runs fine but my fan does not kick in until 110 on the dash and cools it down, however, my internal heater is blowing out cold air - WTF. i have changed the matrix already and really dont want to take apart the dash again as its at least a two day job.

I also flushed the system and checked for air locks and put in VW coolant in there and the problem is still there

I am worried that i am cooking my engine with the fan kicking in at 110. ( changed the fan temp switch yesterday)

 

should i change the thermo stat again

could it be the bypass valve as i have read that on this forum.

 

any help as i would like to drive her more then 40 miles before the water gushes out of the tank.

PS. head gasket has been checked and tested and everything seems to be ok - no gases leaking or oil and water mix
