Hamerite will be fine.

If the reverse tap snaps it'll be even worse than it is now, even with the head off. It'll most likely have to be drilled out which is nigh on impossible with hardened steel taps / easy outs

I can't speak german but it looks like water injection. You inject water in a fine mist into the charge air to reduce the intake temp and the water reduces the likelyhood of det. Scruffy

Looks better than my shed and collection of engine parts, in the metal or photo's. Do you wonder what it's going to look like with no front suspension though?

Put 2 wheel bolts in the hub, with no wheel, then use a long metal bar wedged between them and the floor. What is the torque setting for a VR6? I'm hoping the strut to hub bolts come off easily enough, but if not I'll take Dinkus' hub off attached to the strut. Makes getting the disc locating screw out a bit easier too.

Er, I deal with Vauxhalls and Ford bits, so a big hammer and an extra large hammer is a full tool kit.  Do the pistons push in or wind in when changing the pads?

The locating screws should be easy enough to get undone, just need a good screwdriver and a big hammer.
